"I never know what to do with leftovers after I fix a pot roast with gravy, onion, potatoes and carrots until I found this recipe. I wouldn't really call it a strata because it doesn't have bread cubes in it. Rather, it has a yorkshire pudding baked around everything else. The recipe came from a book called "Marnie's Kitchen Shortcuts" by Marnie Swedberg. The recipe calls for specific amounts, although I tend to throw in whatever amount of leftovers I have."

Just a note, as it doesn't say in the directions, When you put the margarine or fat in the deep-dish 10 inch pie plate and place in a cold oven, then turn the heat to 425 degrees pour the batter into the plate when the oven gets to the 425 mark, that way the fat is piping hot when you pour the batter in.

Outstanding recipe - because I had more pot roast to use than the recipe called for, I used a 13 X 9 baking dish and used 1.5 x the ingredients. I was absolutely delicious.

I had to double the recipe. It turned out perfectly! Normally I make carrots, onions, and potatoes with my pot roast. This time I had made mashed potatoes. So put 3 spoonfuls per row. I baked it minutes longer. It was relish!!! My family thought I worked along time it ;-)

I didn't have potatoes with my potroast so I microwaved a couple small potatos whole and cut then up, un peeled.

An excellent use of leftover roast. I was concerned the middle would be soggy and unpleasant but it wasn't. I added frozen potatoes instead of leftover diced potatoes. I would definitely make this again.

Although I currently live just outside St. Louis, this was the 20th move my husband and I made in the 28 years (at the time of our move) of our marriage. Most of those moves occurred in my husband's 25 year career as a pilot in the Air Force. When he retired 7 years ago, he went to work for Boeing and we both thought we'd go back to Seattle and never move again. Boy were we wrong! But our eventual goal is to end up back in the northwest. I love to read, quilt, and collect cookbooks and recipes. Have I found the right website or what? Pet peeves include people who give low ratings but don't say why and people who rate recipes they haven't tried.
EDITED TO ADD ON Jan. 27, 2007: Well we're here! We made it back to Seattle after what I call The Move From H---! We had major problems on both ends of the move, but the worst things happened here. Less than two weeks after we moved into our new house in Bellevue, a storm blew through and sent two tree limbs through the roof! Our power was off for almost a week, so we ended up moving back into the hotel we thought we had left behind. But we're back in our house now and slowly but surely, it's beginning to feel like home. And on the sunny, warm days, we remember exactly why we've always loved Seattle so much! Our favorite restaurant (Jake O'Shaunesey's) is gone, so we'll have to spend lots of time eating out in search of a new one!
