This is a recipe I learned from my parents when after they started reading about soaking, and it’s beneficial properties for allowing your body to more easily absorb nutrients. It’s so easy to remember, and hands off to make for a snack ahead of time that I try and keep a constant supply in our house!

This Soaked & Roasted Nuts recipe is very simple and requires only three ingredients! I don’t know about you, but sometimes life gets a little crazy and it’s nice to have something that requires minimal ingredients and effort in the kitchen.

The nuts in this Soaked & Roasted Nuts recipe are soaked beforehand, which allows your body to more easily absorb the nutrients when eating the nuts. Also, the salt is incorporated into the water when you are soaking them so they taste salty without having any salt on the outside of them.

This recipe is easily adapted to making the nuts into pralines or a savory treat instead, either before or after roasting process.

Why do you soak nuts before roasting?

Soaking the nuts before roasting breaks down a lot of the phytic acid in the nuts. Phytic acid is something found in almost all plant foods. When we consume phytic acid, it binds to other minerals (making phytates) in our body making them undigestible.

When we break down the phytic acid in the nuts by soaking them before roasting, it allows our body to easily absorb the nutrients in the nuts themselves. Our body is able to process the nutrients easier and faster than non-soaking before roasting them.

How long do you let them soak?

Different nuts have different times frames, but generally you let them soak between 7 – 24 hours. If soaking Cashews, the recommendation is between 7 – 12 hours because they can get a little slimy if left longer. If soaking Cashew nuts, make sure you get raw Cashews as the ones I always see in the store are roasted and salted already.

My favorites are almonds and pecans to roast because I can more easily find them raw. I usually let them sit between the 12 – 24 hour mark. My method is to start soaking them before I got to bed, and then drain and roast them during the day when I’m not using my oven very much.

How do you soak nuts?

Soaking nuts is very simple!

You need:

  • 2 cups of raw nuts (not roasted/salted beforehand from the store)
  • 3 cups of warm water
  • 1 Tablespoon salt (I like to use sea salt)

Directions:

  1. Put all the ingredients into a mason jar, and seal the jar. Shake the jar a few times to dissolve the salt into the warm water.

Let sit on the counter for the 7 – 24 hours, depending on what nuts are being soaked.

What is the best method for roasting nuts?

Once the nuts are done soaking, there are two ways to roast the nuts. You can roast the nuts in a dehydrator, or the oven on a low temperature between 150 – 200 degrees. The lowest temperature my oven goes is 170 degrees, which is what I roast my nuts on.

When I finish draining the nuts after letting them soak, I put them on a baking sheet with parchment paper on top before sticking them in the oven to roast.

How long does it take to roast nuts?

It usually takes around 12 hours for my nuts to taste fully dried. Depending on the the amount of nuts drying at the temperature the oven is set to, it could be longer. Some say it could take up to 24 hours.

Variations of the Recipe

Before Roasting: After you have drained the nuts, you can make them into a sugar coated treat by mixing the wet nuts in 1/2 c. of sugar and 1/2 tsp. cinnamon or another favorite spice. Roast as usual, and you get a wonderful sweet treat!

After Roasting: To make Tamari almonds (which is another favorite of mine), simple remove the almonds from the oven and increase the temperature to 350 degrees. While it is preheating, simply toss the almonds with 2 Tablespoons of Tamari sauce or soy sauce. Return the almonds to a baking sheet, and bake for 5 – 7 minutes more.

Soaked & Roasted Nuts

Yield: 2-3 cups

Ingredients

  • 2 c. raw nuts
  • 3 c. warm water
  • 1 T. salt

Instructions

  1. Place nuts in a glass jar, and add the salt and fill with the 3 c. of warm water.
  2. Seal the jar and shake to dissolve the salt.
  3. Let the nuts soak in the salt water in the sealed jar sit for 12 - 24 hours.
  4. After the soaking period, unseal the jar and drain out any excess liquid.
  5. Preheat oven between 150 - 200 degrees.
  6. Place the soaked nuts on a lined baking sheet, and put in preheated oven.
  7. Roast the nuts, stirring around every few hours, for 10 - 12 hours until they are fully dry. (It helps to taste them along the way to see how dry they are).
  8. Once fully roasted, remove from oven and let cool before putting in any container. Roasted nuts should stay fresh within 2 - 3 weeks.

Notes

1. To make your roasted nuts into sugar roasted nuts/pralines, after the nuts have been soaked and liquid removed, coat in 1/2 c. sugar and 1/2 tsp. cinnamon or other spice blend before sticking in the oven to roast.

2. To make Tamari almonds: After roasting, simply coat the almonds with 2 T. of tamari or soy sauce and roast in the oven again at 350 degrees for 5 - 7 minutes.
