Gluten Free Deep Dish Pizza Crust (1)

If my husband could once again eat gluten, the first thing he would do is order himself a deep-dish pizza from Pizza Hut.

Therefore, once again, I have taken on the challenge to make one of his favorite foods gluten-free. First, I need to let you know that this gluten-free deep-dish pizza is amazing! It’s thick and soft. It stays together when you pick it up. It isn’t crumbly but it also isn’t dense. Seriously, this is just how a pizza crust should be!

I originally went to Pinterest to look for a gluten-free deep dish pizza recipe and was surprised that there really wasn’t anything. So I had to come up with my own. I decided to try to use the same dough from my gluten-free bread recipe. That recipe is made using a bread machine, but it wasn’t hard to convert it to pizza dough.

Very seldom do I make homemade bread so I totally guessed at how long to let the dough rise and punch it down all that complicated stuff that comes with making the dough. However, I’ve made this twice now and both times it has turned out perfectly!!! Therefore, I know it works!

  • 1-2/3 cup warm water (between 110-115 degrees F)
  • 1-1/2 tablespoons yeast
  • 3 tablespoons sugar
  • 3 eggs, room temperature
  • 4 tablespoons melted butter
  • 1 teaspoon vinegar
  • 2 cups rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1/3 cup powdered milk
  • 2-1/2 teaspoons xanthan gum
  1. Start by proofing your yeast. Combine sugar, water, and yeast in a bowl. Cover and sit in a warm area for 15 minutes.
  2. Then combine it with the rest of your liquid ingredients.
  3. Mix all the dry ingredients together.
  4. Add the wet and dry ingredients and mix together in a large mixing bowl.
  5. Brush some olive oil on top of your dough to keep it from getting crusty while it rises.
  6. Cover your bowl with a clean towel or plastic wrap and set it in a warm area. I set mine in the oven (turned off) with the oven light on. If it was summertime I would place it either in a sunny window or in the garage.
  7. Let it rise for 40 minutes.
  8. Gently stir it just a few times.
  9. Let it rise for another 40 minutes.
  • Divide dough in half
  • Place one of the halves in a 12″ Pizza Pan.I used a silicone pan. I love baking with silicone products because nothing sticks to them!This recipe will make two12″ pizzas.
  • Bake for 15 minutes at 350 degrees F– or until it starts to look golden.
  • Remove from silicone pan and flip upside down. Place on a wire rack and bake for another 8-10 minutes until golden brown.
  • Add your sauce and all your favorite toppings!
  • Bake for 5-10 more minutes until cheese is melted.

    Yield: Yields Two 12-inch Pizza Crusts

      Ok, this crust is AMAZING!! I did not have enough rice flour (only had one cup of brown), so I subbed one cup of light buckwheat flour. I also did not have a silicone pan, so I used a 12" nonstick pan from my convection oven. I greased it with Olive oil, baked for 15 minutes, topped, and baked for another 10 minutes. Came out perfect! I did take a pic, but don't see where I can add it here. Will do on Pinterest, where I found this recipe. Thank you, "Blessed Beyond Crazy" for this fantastic deep dish recipe! You ROCK!!!

      This pizza freezes very well. I baked the pizza according to directions, put all the toppings on including the cheese. Wrapped it up well and froze it. When I needed a quick meal, I took it out of the freezer and baked it at 400 degrees for around 13 to 17 minutes. Delicious!! My son dropped by for a visit (he is non gf BTW) and wanted to know where I bought it!! I said, "Son, this pizza is made from scratch and is gf". He was surprised!! He loved it!

      You do have good ideas! The cheese bread sounds perfect to serve with pasta dishes since gluten garlic bread is a thing of the past in this house. Will try that next. Ty

      BTW The silicone pizza pan is something everyone gf needs. Love mine. So easy to have the pizza shells turn out well.

      This pizza is amazing!! Soooo delicious!! My gf granddaughter loved it! Absent minded me remembered to put the eggs, vinegar, and melted butter in the dough halfway through it's rising. I just added those three ingredients to the dough and mixed it well and put it back in the lighted oven (BTW, thanks for that hint) to let it finish it's first rising. Now, really, you would think this would kind of ruin it, wouldn't you? No way!! Turned out very well. Thanks so much for this recipe. Gonna make it again this weekend. Makes me proud!! We sure do love pizza here. My hubby said it tasted better than the "D" rising crust frozen pizza. You know what I mean. Thanks again.

Just brush it down with butter and add about 2-3 cups of mozzarella cheese, bake until cheese is melted! That is my family's favorite!

      Would this recipe work if you have a gluten free flour mix? If so, how would I change the amounts? My mix has all the different flours and xanthum gum included.

        Hi Dawn,Sure, this recipe should work just fine using gluten free flour mix. Since your mix contains all of the different flour blends + the xanthum gum, you should be able to approximately 3 cups. In our recipe, leave out the rice and tapioca flours, the potato starch and the xanthum gum and use the 3 cups of your gluten free flour blend. I suggest that you add 2 cups, then gradually add the remaining cup. You may not need the entire 3 cups of flour, or perhaps you will need just a little more than 3 cups. You should be able to tell how the dough looks and feels as you work it up and adjust the amount of your gluten free flour as needed.         I didn't know that a silicone pizza pan existed either until I got one for Christmas from my mom. That was what pushed me to make this recipe in the first place! I love it!
