Delicata is the lazy cook's winter squash. The sole squash I'm able to square off with in breezy fashion. Unlike working with other squash, maintaining composure throughout the preparation of this varietal is usually attainable. If you've ever cursed a Hokkaido, or permanently lodged a knife in a Hubbard squash, you know what I'm talking about. The delicata is a dream. Thin-skinned, there is no need to peel them. A length-wise slice from end to end is the toughest maneuver, and from there it's smooth going. A quick drag of a spoon clears the seeds, and a run of cuts yields a perfect deck of scalloped crescents. More often than not, at this point, I'll roast the squash a few degrees shy of oblivion - it becomes golden, crusted, and perfect straight from the oven. As we're on the doorstep of winter squash season, I thought I'd do a quick round up of a few of my favorite delicata squash recipes from the archives, and link out to a handful of delicata gems I've spotted out and about as well. Roasted Delicata Squash Salad (above)
Please make this. Pretty, scalloped-edged cross-cuts of the delicata squash, a few small potatoes, chopped kale, radishes, Marcona almonds - and a miso harissa oil. An all-time favorite.
Roasted Vegetable Orzo (above)
This one I love for its simplicity. In autumn, delicata and kale are nearly always around. Chances are you have most of what you need to pull it together - roasted delicata squash and kale tossed with orzo pasta & salted yogurt dressing.
Miso Sesame Winter Squash (above)
This beauty was inspired by a recipe in Bryant Terry's cookbook, The Inspired Vegan. Roasted winter squash (and tofu) with a miso, maple, sesame, citrus sauce.

I haven't made too many squash recipes, but I have heard a lot recently that Hokkaido is delicious but difficult to make, I am getting a little scared to try this, haha. These dishes all look amazing, and I am inspired to try a few more squash recipes.

I love delicata squash! I grew it in my garden this year for the first time, and it was so prolific, it seemed like we were eating it everyday for a while. One of my favorite things to do with it was to slice it into rings and grill it. I will have to try your recipe. Sounds amazing!

Delicata squash is one of my favorite flavors of fall. We received SO many in Oregon, and are a little pressed to find some here in Florida. Until then, trying to supplement with our what-seems-like-endless seasonal plethora of sweet potatoes. Although, they don't quite deliver the same delicate, tender experience the squash does. Fingers crossed for squash soon!

oh my gosh!! I just typed your website into my browser planning to search for Delicata squash recipes! I have never seen them before in a supermarket around here. Love your commentary on the delicate nature of this squash. Sure beats the meat cleaver moments of Red Kuri. Especially with vegans. Not many vegans have cleavers.Also love its size for single portion stuffed squash, like in my recipe, linked. Works with any rice, bread, thrown together stuffing though.

So funny to see this post: I grabbed two Delicata at TJ's on the weekend with your Roasted Delicata squash salad in mind :) It's one of my all time favourite recipes from this site, and it's become a go-to whenever I find myself with a surfeit of squash, kale and potatoes. The miso-Harissa combo is brilliant and the almonds give it perfect crunch. I'm not a fan of radish and always leave this out, but the recipe never seems to have suffered. Agree with the Delicata love--now kicking myself for not buying more! :)

I love Delicata and, like you, cook it straight up in the oven. However, I have also made a recipe of Delicata Squash with Lady Apples (and slab bacon) and it was divine. It's hard to find Lady Apples so I have also substituted any baking apple, sliced. Now I want to go cook.

I have been experimenting with using coconut milk and came up with a yummy recipe for Delicata Squash stuffed with coconut curry swiss chard and chickpeas. You just roast the delicata in a 400 degree oven then stuff with coconut milk, curry, swiss chard and chickpeas mixture and enjoy. The complete recipe can found on my blog www.cooksbybooks.com.
