Delicata Squash Recipes To Try (8)

Delicata is the lazy cook's winter squash. The sole squash I'm able to square off with in breezy fashion. Unlike working with other squash, maintaining composure throughout the preparation of this varietal is usually attainable. If you've ever cursed a Hokkaido, or permanently lodged a knife in a Hubbard squash, you know what I'm talking about. The delicata is a dream. Thin-skinned, there is no need to peel them. A length-wise slice from end to end is the toughest maneuver, and from there it's smooth going. A quick drag of a spoon clears the seeds, and a run of cuts yields a perfect deck of scalloped crescents. More often than not, at this point, I'll roast the squash a few degrees shy of oblivion - it becomes golden, crusted, and perfect straight from the oven. As we're on the doorstep of winter squash season, I thought I'd do a quick round up of a few of my favorite delicata squash recipes from the archives, and link out to a handful of delicata gems I've spotted out and about as well. Enjoy! xo -h

Roasted Delicata Squash Salad (above)
Please make this. Pretty, scalloped-edged cross-cuts of the delicata squash, a few small potatoes, chopped kale, radishes, Marcona almonds - and a miso harissa oil. An all-time favorite.

Delicata Squash Recipes To Try (10)

Roasted Vegetable Orzo (above)
This one I love for its simplicity. In autumn, delicata and kale are nearly always around. Chances are you have most of what you need to pull it together - roasted delicata squash and kale tossed with orzo pasta & salted yogurt dressing.

Delicata Squash Recipes To Try (11)

Miso Sesame Winter Squash (above)
This beauty was inspired by a recipe in Bryant Terry's cookbook, The Inspired Vegan. Roasted winter squash (and tofu) with a miso, maple, sesame, citrus sauce.

I can't wait to try every single one of these. I started at the top tonight, and the only problem I had was that every time I went to check the squash, another almond would accidentally fall into my mouth. :) Thank you so much!

Erica

I haven't made too many squash recipes, but I have heard a lot recently that Hokkaido is delicious but difficult to make, I am getting a little scared to try this, haha. These dishes all look amazing, and I am inspired to try a few more squash recipes.

Kristin Nicole

I made them but they weren't super crispy. The bottoms were. Tops were kind of soft. Didn't cook them long enough?

Jenny Stafford

Belatedly, hope you're going to post more about your trip to Morocco. Heading there in the spring and would love to hear what you saw/did/ate.

Sue Ruvo

I love delicata squash! I grew it in my garden this year for the first time, and it was so prolific, it seemed like we were eating it everyday for a while. One of my favorite things to do with it was to slice it into rings and grill it. I will have to try your recipe. Sounds amazing!

Laura @ All Spice and Yum

Thank you so much for this! I have been making the roasted squash salad for the last couple of months, it is so good! I still have three delicata left from my CSA basket this summer. Now the hard part-deciding which recipe(s) to use them in.

Heather

Delicata high five! We grew way too much this year, so this is pretty timely. Thanks so much for linking, Heidi. I love that Bryant Terry-inspired salad too. (and love his books so much in general)

Laura

perfect post, my delicata were roasted tonight and added to dinner and to tomorrow's work lunch. Want to try the recipe with apple in it. Great travels!

Ellie

Delicata squash is one of my favorite flavors of fall. We received SO many in Oregon, and are a little pressed to find some here in Florida. Until then, trying to supplement with our what-seems-like-endless seasonal plethora of sweet potatoes. Although, they don't quite deliver the same delicate, tender experience the squash does. Fingers crossed for squash soon!

Jill @ 42potatoes

Thanks so much for the link love! I'll have to get my hands on some harissa paste, your top recipe has me drooling...Hope you're having a lovely time in Morocco!

HS: Thanks Jeanine!

Jeanine

I love delicata squash! My usual favorite is just thinly-sliced rings, sprinkled with salt and cayenne, roasted. But this year I've been adapting a super-simple veggie fried rice recipe, using delicata and kale as the vegetables.

Erin

The delicata with cream and parmigiana is AMAAAAZINGLY good. It has quickly entered my regular rotation. So easy, so terribly good!

Susan

I love the Kinfolk Delicata Squash, Arugula & Mozzarella salad recipe. I've made it as a salad several times since it was posted. I have also made just the squash portion of the recipe just for snacking. I love what the chile flavor does with the squash. So good!

Ann

Fantastic ideas for squash!! Thank you for this.

Dan from Platter Talk

Yum! Thanks for sharing this. Another recipe to add to my list:)

sal

Totally agree - I get overly excited when I see delicata squash back in the stores. I made a quick soup of it yesterday with red pepper, broccoli and a bit of sweet potato, it was yummy. Love all your recipes.

Alice Dishes

Yes - squash are so tantalising. So yummy. And so utterly impossible to chop up. Will try the delicata squash, though. And will definitely try the vegetable orzo.

Skye

I just bought a delicata last weekend and have been wondering what I'd do with it and then I went to Gwen's and she had one mixed in a salad with sesame seeds and greens and it looked delish. Now, all these choices. I can't wait for dinner tomorrow night!

lori

The Miso-Curry Delicata Squash from Super Natural Everyday is my favorite. I literally just made it tonight. The hubs couldn't stop talking about how good it was. I paired it with some coconut-milk rice. Thank you for more inspiration!

Ashley

Your recent post from Kinfolk -- delicata, arugula, mozzarella plus a kick from chile -- should be added to this list. Loved it!

HS: Indeed! I meant to add it before putting the post up. xo

Patty

These all sound wonderful. i'm going to give the Roasted Vegetable Orzo a try first.

Allie

These squash or pumpkin recipes look really good, especially the first annointed with miso harissa oil, but I am wondering what would be the equivalent , here in Australia. to a Delicata Squash. Perhaps a Butternut?

Francesca

chickpeas, squash, kale, and coconut!? Sign me up! That sounds like an incredible combo that I can't wait to try.

christina @ The Beautiful Balance

I love delicata too :) Thanks for the kind shout-out, Heidi (but I can't take total credit; it's Domenica Marchetti's recipe!). Hope you're well ---S

Sarah

oh my gosh!! I just typed your website into my browser planning to search for Delicata squash recipes! I have never seen them before in a supermarket around here. We recently got a Fresh Market and I was so excited to find delicata squash this week. I bought them knowing they would meet their fate with a Heidi recipe :-)

Kimber

Love your commentary on the delicate nature of this squash. Sure beats the meat cleaver moments of Red Kuri. Especially with vegans. Not many vegans have cleavers. Also love its size for single portion stuffed squash, like in my recipe, linked. Works with any rice, bread, thrown together stuffing though.

Katie Simmons

So funny to see this post: I grabbed two Delicata at TJ's on the weekend with your Roasted Delicata squash salad in mind :) It's one of my all time favourite recipes from this site, and it's become a go-to whenever I find myself with a surfeit of squash, kale and potatoes. The miso-Harissa combo is brilliant and the almonds give it perfect crunch. I'm not a fan of radish and always leave this out, but the recipe never seems to have suffered. Agree with the Delicata love--now kicking myself for not buying more! :)

Lynne

I rarely have the pleasure of finding Delicata Squash locally. Although I have tried it and understand your love for it. It truly is a dream to work with. Book marking these for the next time I run into one at the market.

Trish @infinebalance

I love Delicata and, like you, cook it straight up in the oven. However, I have also made a recipe of Delicata Squash with Lady Apples (and slab bacon) and it was divine. It's hard to find Lady Apples so I have also substituted any baking apple, sliced. Now I want to go cook.

Agnes Gawne

Great to have all of these recipes in one place - thanks! Delicata is my go-to squash, for sure. As well as being easy to prepare and low on waste (since you can eat the skin too), it's easy to grow in a smallish garden space.

Laurie MacBride

Perfect timing. The delicata -- never easy to find here in Ontario -- are available for their short window and I'm stockpiling them. Just made the miso/harissa "salad" (we eat it as a one-dish feast, all food groups covered) earlier in the week...

Nick

I love your Miso-Curry Delicata Squash roast from your second cookbook. It is a favorite around our place this time of year. I also really like adding the squash to a thai red curry with basil and coconut milk.

Anita

Delicata is a fabulous squash, especially on a weeknight, somehow, when time is of the essence. I had your miso-roasted squash, tofu and potato recipe with kale last night and it was on the table 40 minutes after I walked in the door!

Susanna Singer

Que bom aspeto!!!Kiss, Susana

Susana

I have been experimenting with using coconut milk and came up with a yummy recipe for Delicata Squash stuffed with coconut curry swiss chard and chickpeas. You just roast the delicata in a 400 degree oven then stuff with coconut milk, curry, swiss chard and chickpeas mixture and enjoy. The complete recipe can found on my blog www.cooksbybooks.com.

Peggy for cooksbybooks.com

yes, my other favorite is the recipe you recently posted from the Kinfolk Table. I've made it twice already! I never would have thought to put mozzarella together with the squash and greens, but the combo is really great. Thanks for sharing this list, I'll certainly be cooking my way through it this fall.

meliSsa

A squash for lazy cooks? Count me in!

Rachel @ GrokGrub

It is always nice to have an ingredient that poses minimal threat to your fingers. In other words, not chopping them off!

Mallory @ Because I Like Chocolate

I, too, love the delicata. And I can't wait to use it in all of these recipes this season. Happy eating!Safe travels!

DessertForTwo

A delicata squash is officially on my grocery list. I've been hearing about its wonders (no peeling the skin did it) and I can't wait to try it. Thank you for the ideas!

Monica

I love cooking with delicata squash, they are so pretty. My kids always have a kick eating them with the skin on! Thanks a lot for sharing your favorite recipe list, my Mom just brought me back some harissa paste from France, so I cannot wait to try your miso harissa delicata salad! Happy Spooky Halloween to you!

Ketmala Phoumalavong

OK - wow - these all look so good, but I have to go for the miso sesame one first. Is it weird that I've never done delicata? Acorn, check. Butternut, check. Spaghetti, check (though I'm not really a fan), but no delicata.Clearly, my time has arrived ...:-)

Peter

I bookmarked that miso squash recipe a while ago, and it looks just as delicious to me now as it did then...I'd better get round to actually making it soon!
